The actual data you are transforming does not get saved into the .morph project - the data needs to be imported from a data source, or copy/pasted into EasyMorph when you have the project open, as you are doing with the sandbox data. When you close the project, that temporary sandbox data gets wiped.
If you always want to import the values present in a certain column of an Excel file, you can use the Import Excel Spreadsheet action and select the column that you want to import (in the following screenshot, column "company"), and every time you open the Easymorph project, that column will load automatically, with no need to copy and paste. And from there, you can transform the data as you need.
